Top Ten Microwave Mug Cakes and Cookies

     Mug cakes are a perfect fix for those late night cravings. According to Sophomore Lucy Loazer, “Mug cakes are so simple and quick to make! I love chocolate, so my favorite is the molten chocolate cake.” All of these cakes and cookies use common household ingredients, and are ready to eat in less than five minutes. Erin Chizmadia said, “I couldn’t believe how good they turned out. I was a bit skeptical at first, because who thinks to cook a cake or cookie in the microwave? But now I’m addicted.” ​

Molten Chocolate Cake
Ingredients:
  • ¼ cup flour
  • ¼ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons melted butter
  • 3 tablespoons whole milk (at room temperature)
  • 1 egg (at room temperature)
  • ½ teaspoon vanilla extract
  • 1 oz (28g) semisweet chocolate (chips or lightly broken up)
  • 1 tablespoon water
Instructions:
  1. In a large mug, whisk together the flour, sugar, cocoa powder, baking powder and salt until combined
  2. Add the melted butter, milk, egg and vanilla. Whisk well to combine (make sure to incorporate the flour mixture)
  3. Place the chocolate pieces/chips in the center of the mug (these will sink as the cake bakes; do not push them down)
  4. Evenly pour the tablespoon of water on top of the batter
  5. Cook in microwave for 1 minute and 20 seconds to 2 minutes (or until the edges look set and the center is wet and shiny, but not raw). Do not over bake
  6. Let it cool for 4-5 minutes so the sauce can thicken

Coffee Cake 
Ingredients:
  • 1 tablespoon butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons applesauce
  • Few drops of vanilla extract
  • ¼ cup flour                                                                 
  • ⅛ teaspoon baking powder
  • Pinch of salt
For the Streusel:
  • 1 tablespoon butter
  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • ¼ teaspoon cinnamon 
Instructions:
  1. In a large mug, soften the butter in the microwave (only 5-10 seconds; don’t melt it)
  2. Stir in the sugar and mix until combined
  3. Mix in the applesauce, vanilla (just a little bit), flour, baking powder, and salt
  4. For the streusel: In a small bowl, combine the butter, flour, brown sugar, and cinnamon
  5. Use your fingers to pinch the butter to mix it with the other ingredients. Once it looks lumpy, but combined (like lumpy sand) pour it on top of the cake batter
  6. Cook in the microwave for 50-70 seconds (start with 50 seconds and then continue in 10 second intervals)

Nutella Cake
Ingredients:
  • ¼ cup flour
  • ¼ cup Nutella                                                               
  • 3 tablespoons milk
  • ¼ teaspoon baking powder
Instructions:
  1. In a large mug, whisk flour, Nutella, milk, and baking powder (batter will be thick)
  2. Cook in microwave for 1 minute to 1½ minutes (start with 1 minute and then continue in 10 second intervals)

Lemon Cake

Ingredients:
  • 3 tablespoons flour
  • 3 tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • 1 egg                              
  • 2 tablespoons canola oil
  • 1 teaspoon grated lemon zest
  • 2 teaspoons lemon juice
Instructions:
  1. Spray a large mug with oil
  2. Combine the flour, sugar and baking powder
  3. Whisk in the egg, oil, lemon zest, and lemon juice
  4. Cook in microwave for 2 minutes

S’mores Cake 
Ingredients:
  • 2 tablespoons butter, melted
  • ¼ cup graham cracker crumbs
  • 2 tablespoons brown sugar, packed
  • ½ tablespoon granulated sugar
  • ¼ cup milk                                                                
  • ¼ cup and 1 tablespoon all-purpose flour
  • ¼ teaspoon baking powder
  • dash of ground cinnamon
  • 1 tablespoon mallow bits (or mini marshmallows)
  • 2 snack size Hershey's candy bars (broken into pieces)
  • 8-10 mini marshmallows (optional for garnish)
Instructions:
  1. In a large mug, combine the butter, graham cracker crumbs, brown and granulated sugar
  2. Add in the milk and stir to combine
  3. Add the flour, baking powder and ground cinnamon
  4. Stir in the mallow bits and pieces of chocolate
  5. Cook in the microwave for 1 minute and 35 seconds
  6. Place mini marshmallows on top of cake and lightly toast with a blowtorch

Funfetti Mug Cake
Ingredients:
  • 4 tablespoons all purpose flour
  • ¼ teaspoon baking powder
  • 2 teaspoons granulated white sugar
  • 3 tablespoons milk                                                     
  • ½  tablespoon vegetable oil
  • ⅛ teaspoon vanilla extract
  • 1½  teaspoons sprinkles
Instructions:
  1. In a large mug combine flour, baking powder, sugar, milk, oil and vanilla with a small whisk
  2. Mix in 1 teaspoon of the sprinkles, and distribute the remaining 1/2 teaspoon on top
  3. Cook in the microwave for 50 seconds to 1 minute and 15 seconds

Chocolate Peanut Butter Cake
Ingredients:
  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 1½  tablespoons cocoa powder
  • ¼  teaspoon baking powder
  • pinch of salt
  • 3 tablespoons milk
  • 1½  tablespoons vegetable oil
  • 1 tablespoon peanut butter
Instructions:
  1. In a large mug, whisk together the flour, sugar, cocoa powder, baking powder and salt
  2. Add the milk, vegetable oil and peanut butter, and whisk until combined
  3. Cook in the microwave for 1 minute and 10 seconds

Chocolate Chip Cookie
Ingredients:
  • 1 tablespoon unsalted butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon packed brown sugar
  • ½ teaspoon vanilla extract
  • ⅛  teaspoon (or a small pinch) salt
  • 1 egg yolk
  • 3 tablespoons flour
  • 1-2 tablespoons chocolate chips 
Instructions:
  1. Microwave butter in a large mug until melted
  2. Add in the sugars, vanilla extract and salt and mix until combined
  3. Mix in egg yolk, then flour
  4. Fold in chocolate chips
  5. Cook in microwave for 40-50 seconds

Sugar Cookie
Ingredients:
  • 1 tablespoon butter
  • 2 tablespoons sugar
  • ¼  teaspoon vanilla
  • 1 pinch salt                                                              
  • 1 egg yolk
  • 3 tablespoons flour
Instructions:
  1. Spray a large mug with cooking spray
  2. Place butter in the mug and melt
  3. Mix in the egg yolk and sugar
  4. Stir in vanilla and salt
  5. Add in the flour and stir until combined
  6. Cook in the microwave for 40-45 seconds

Snickerdoodle 
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon granulated sugar
  • 1 tablespoon packed dark brown sugar
  • Pinch of cream of tartar                                         
  • Pinch of salt
  • ⅛ teaspoon of vanilla
  • 2 dashes (shakes) cinnamon
  • 1 egg yolk
  • 3 tablespoons of all-purpose flour
Instructions:
  1. Melt butter in a large mug
  2. Mix in sugars and butter
  3. Add cream of tartar, salt, vanilla, and cinnamon; stir until combined
  4. Stir in egg yolk, then flour
  5. Sprinkle additional cinnamon on top of cookie and cook in microwave for 45-60 seconds



​Tip for graduating seniors: You can pre-make a dry mix so all you have to do is add the wet ingredients! ​
